Here are some facts about life lately:
1) I’m cold all the time.
2) I’m trying to be reasonably gluten- and dairy-free.
3) I never want to see another salad.
4) I have about 15 minutes to eat lunch.
Solution: Sunday Soup Night. Soup Night came about as a result of one delicious soup that Matt made on a Sunday night about six weeks ago. It was so delicious that night, but even more delicious the next day. And for the rest of the week. It was healthy, it was warm, and it took about three minutes to heat up. Brilliant.
Since then, it’s been soup every Sunday, and leftovers all week. I see a warm and cozy season of soup ahead. If you’re interested, this is what we’ve tried so far:
